Jerked Chicken Skewers

INGREDIENTS

1 Boneless chicken breast cut in half; (6 ounce)
2 tb Wet jerk marinade
1 ts Dry jerk seasoning
1 ts Paul Prudhomme's Poultry Magic
2 Wooden skewers; soaked

INSTRUCTIONS

Pound out chicken breast between sheets of plastic wrap until flattened.
Remove plastic wrap and marinate the chicken in a non-reactive bowl with
the wet marinade for 1 hour, refrigerated.
Put the chicken halves on the skewers and season with the dry jerk
seasoning and poultry magic. Grill or broil 3 minutes on each side.
Yield: 2 servings
