Roasted-Garlic Puree

INGREDIENTS

20 lg Unpeeled garlic cloves
1 tb Extra-virgin olive oil
Coarse salt
Freshly-ground white pepper

INSTRUCTIONS

Heat oven to 325 degrees. Place the garlic in a small baking dish, and toss
with the oil and 1 tablespoon water. Season with salt and pepper. Cover
with aluminum foil; bake until the garlic is tender (squeeze one of the
cloves to check), 25 to 35 minutes.
Press garlic out of its skin into a bowl; mash with a fork. Set aside until
ready to use.
Makes 4 tablespoons.
