Tasty Black Bean Soup

INGREDIENTS

1 lg Onion
1/2 lb Hot bulk sausage
2 Garlic cloves
1 Jalapeno
1 Bay leaf
1/4 c Cilantro leaves
1 ts Cumin
1/4 ts Cayenne pepper
Salt and black pepper
2 cn Black beans
1 lg Can whole tomatoes
1/2 c Chicken broth

INSTRUCTIONS

Cook onion and sausage together in large pan until sausage is cooked. About
5 minutes. Add garlic. Cook 1 minute stir in jalapeno, bay leaf, cilantro,
cumin, cayenne, salt and black pepper, black beans, tomatoes and broth.
Partially cover and simmer 8-10 minutes. Puree 1/2 of soup in food
processor. Add back to soup in pot. Adjust seasoning and serve hot.
Approximately 12-14 minutes.
Per serving (excluding unknown items): 1463 Calories; 8g Fat (5% calories
from fat); 89g Protein; 269g Carbohydrate; 1mg Cholesterol; 826mg Sodium
