Tortilla Peach Cobbler

INGREDIENTS

1/2 c Sugar
1 tb Cornstarch
1 16 oz bag frozen unsweetened peaches; thawed
1 ts Chopped candied ginger
2 Flour tortillas
(white or whole wheat)
1 tb Sugar; (preferably coarse)
Sliced almonds; (optional)
Cooking spray

INSTRUCTIONS

Preheat oven to 400 F and lightly spray an 8 or 9-inch round quiche dish or
cake pan. In a mixing bowl, stir together sugar and cornstarch. Add peaches
with juice and ginger. Toss to combine evenly. Spread 1/2 of the peach
mixture evenly into prepared dish. Arrange 1/2 of the tortilla strips over
peaches. Top with remaining peach mixture. Arrange remaining tortilla
strips over peaches in a lattice pattern. Lightly spray lattice and
sprinkle with coarse sugar and almonds, if desired. Bake about 25 minutes
until filling is bubbly throughout and top is browned.
