Though still set apart, retaining all His holiness and deity, God in His infinite wisdom became a man that first Christmas morning and chose to dwell intimately and personally amongst His creation. The God who created stars larger than our earth’s orbit and ten million times brighter than our sun, created the womb where He would grow and the manger where He would lay. The God who dwelt in perfect glory through eternity past would be wrapped in swaddling cloths to share space with barnyard animals. The God who deserved every right to born in a palace to royal people, humbled Himself and chose Bethlehem and a poor betrothed teenage couple named Mary and Joseph. Most humiliating was the fact that God, though without sin, took on human flesh with all its weaknesses and problems and chose to dwell among sinners.

INGREDIENTS

1 Lime
150 ml Whipping cream
1 425 gram can exotic fruit salad; (in light syrup),
; drained
2 ts Light muscovado sugar
1 425 gram can sliced mango; (in light syrup),
; drained
Crisp biscuits; to serve

INSTRUCTIONS

1 Pare the lime rind, leaving behind the white pith and blanch for a minute
in a small pan of boiling water. Drain and refresh under cold running water
for a vibrant colour.
2 Place the cream in a bowl and whip until it just holds its shape and has
soft peaks. Place the exotic fruit salad in a food processor, squeeze in
the lime juice and add the sugar. Whizz to a puree and fold into the cream.
3 Dice up the mango flesh and divide half between two elegant stemmed
glasses set on a plate.
4 Spoon in half the cream mix and sprinkle the remaining diced mango on
top, finishing with the rest of the cream mixture, swirling the top up over
the glass with a spoon. Decorate with a small pile of reserved lime rind
and serve at once with some crisp biscuits.
