In Shansi I found Chinese Christians who were accustomed to spend time in fasting and prayer. They recognized that this fasting, which so many dislike, which requires faith in God, since it makes one feel weak and poorly, is really a Divinely appointed means of grace. Perhaps the greatest hindrance to our work is our own imagined strength; and in fasting we learn what poor, weak creatures we are-dependent on a meal of meat for the little strength which we are so apt to lean upon.

Hazelnut Oatmeal Pancakes

INGREDIENTS

2 c Buttermilk
1 1/2 c Old fashioned oats
2 Eggs
1/2 c Flour
1 T Sugar
1 t Baking soda
1/2 t Salt
1/2 c Hazelnuts, chopped toasted
Vegetable oil
Maple syrup

INSTRUCTIONS

Mix buttermilk and oats in large bowl. Let stand 5 minutes. Whisk in
eggs. Mix in flour, sugar, baking soda and salt; stir in chopped
hazelnuts. Heat heavy large skillet over medium-high heat. Brush with
oil. Drop batter by 1/3 cupfuls into skillet, spacing apart. Cook
until bubbles form on top of pancakes, about 2 minutes. Turn and cook
until bottoms are golden, about 2 minutes more. Transfer to plate.
Repeat with remaining batter, brushing skillet with oil as needed.
