Ovo-lacto: Spinach-rice Casserole

INGREDIENTS

4 c Cooked brown rice
2 lb Raw, chopped spinach
1 c Chopped onion
2 Cloves minced garlic
3 T Butter
4 Beaten eggs
1 c Milk
1 1/2 c Grated cheddar
1/4 c Chopped parsley
2 T Tamari sauce
1/2 t Salt, or to taste
Nutmeg, cayenne
1/4 c Sunflower seeds
Paprika

INSTRUCTIONS

Saute onions and garlic with salt in butter.  When onions are soft,
add spinach.  Cook approximately 2 minutes.  Combine with all
ingredients except sunflower seeds and paprika.  Spread into buttered
casserole and sprinkle sunflower seeds and  paprika on top.  Bake
