It is commonly said that covetousness is one of the reigning sins of old age. How strange that it should be so! Especially considering what they have seen, and known, and it may be, felt of the emptiness and uncertainty of riches. They have witnessed how often they make themselves wings. What! And not yet convinced! What! Almost at the end of thy journey, and yet loading thyself with thick clay! Think of the time of day. It is almost night; even sun-set. And art thou unmindful of the grave? The body is bending downwards, let the heart be upwards.

Mexican-style Meat Loaf

INGREDIENTS

No-stick corn oil cooking
Spray
1 lb Extra-lean ground turkey
3/4 lb Ground beef sirloin
2 Green onions, chopped
3/4 t Salt
3/4 t Ground cumin
1/2 t Dried marjoram or oregano
1/4 t Freshly ground black pepper
1 c Fresh bread crumbs
7 oz Jar sweet roasted red pepper
Drained and chopped
1 Egg white
1/2 c Canned black beans, drained

INSTRUCTIONS

Heat oven to 350 degrees.  Lightly coat an 8x5x3 inch loaf baking pan
with no-stick corn oil cooking spray; set aside.  In a large bowl,
combine the extra-lean ground turkey, ground sirloin, green onions,
salt, cumin, marjoram or oregano, black pepper, bread crumbs, red
pepper, egg white and black beans.  Mix with your hands or a sturdy
spatula to thoroughly combine all ingredients.  Pack into prepared  pan
and bake 45 minutes. Remove from heat and allow to rest 5 minutes
before slicing. Cut into 1 inch slices. Posted to MM-Recipes Digest  V3
