Sausage In Cream Sauce

INGREDIENTS

1 lb Sweet Italian sausage meat
1 t Basil
1 c Onion, finely minced
1 t Sage
2 t Garlic, finely minced
1 t Tarragon
3 T Butter
1 t Oregano
3 T Olive oil
1 pt Heavy cream
1 t Thyme
Hot pasta of your choice

INSTRUCTIONS

Heat a very large skillet, melt butter and oil and sautéonion and
garlic until translucent. Add sausage meat and spices to the onion
mixture and cook on moderate heat for 10 to 15 minutes, or until the
sausage is completely cooked. Add the cream and reduce by one-third.
This should take about 5 minutes on moderate heat. Stir very
frequently to insure it doesn't stick or burn. Taste, adjust  seasoning
with salt and pepper and whatever else you want to add.  Pour over hot
