We start each day with our personal security resting not on the accepting love of God and the sacrifice of Christ but on our present feelings or recent achievements in the Christian life. Since these arguments will not quiet the human conscience, we are inevitably moved either to discouragement and apathy or to a self-righteousness which falsifies the record to achieve a sense of peace. But the faith that is able to warm itself at the fire of God’s love, instead of having to steal love and self-acceptance from other sources, is actually the root of peace.

Sea Bass With Onion And Cumin Sauce

INGREDIENTS

4 Sea bass or halibut fillets
1 inch thick
6-ounce
1/4 c Fresh lemon juice
1 lb Tomatoes
3 T Vegetable oil
2 Onions, cut into
1/4-inch-thick
slices
4 Garlic cloves, pressed
1 1/2 t Ground cumin

INSTRUCTIONS

Place fish in glass baking dish. Pour lemon juice over. Season with
salt and pepper. Chill while preparing sauce.  Blanch tomatoes in pot
of boiling water for 20 seconds. Drain. Peel  tomatoes. Cut tomatoes in
half; squeeze out seeds. Chop tomatoes; set  aside.  Heat oil in heavy
large skillet over medium heat. Add onions, cover  and cook until soft
and golden brown, stirring occasionally, about 20  minutes. Add garlic
and saute 30 seconds. Mix in cumin, then  tomatoes. Simmer sauce 5
minutes. Add fish with lemon juice and  simmer until fish is just
cooked through, about 10 minutes.  Using slotted spatula, transfer fish
to platter. Boil sauce in skillet  until slightly thickened, about 5
minutes. Season to taste with salt  and pepper. Spoon sauce over fish.
