INGREDIENTS

1 T Olive oil
3 Spring onions, chopped
1 Clove garlic, crushed
420 g Mixed beans, drained well
75 g Your favourite stuffing mix
1 Zucchini, grated
1 Carrot, grated
4 Hamburger buns, lightly
toasted
Salt and pepper
Yoghurt or mayonnaise
Lettuce
Tomato
Cucumber
Onion slices

INSTRUCTIONS

In a saut pan, add 1/2 tbs oil. Heat and saut the spring onions and
garlic.  Add the mixed beans and cook for 2 mins, mashing them with a
fork.  Put the stuffing mix into a bowl, pour over 300ml boiling water,
mix  and stir in the carrot, zucchini and bean mixture.  Season and
divide into 4 burgers.  Place the remaining oil into a saut pan and
cook the burgers for 3  minutes on each side until golden and brown.
Stack onto the toasted burger buns with the salad ingredients.  Serve
