Apple-Raisin Cake

INGREDIENTS

2 Eggs
1 1/2 c Sugar
1 c Oil
2 c Flour
2 ts Vanilla
1 ts Salt
1 ts Baking soda; (bicarbonate)
1/2 c Raisins; up to 1
1 c Chopped nuts; (optional)
4 lg Apples; peeled and diced.

INSTRUCTIONS

Recipe by: Merle Gutkin (my sister in London)
(Preheat oven to 325 deg. F.)
1. Beat eggs, sugar & oil.
2. Add baking soda, flour, salt.
3. Stir in pre-soaked raisins and apples. (soak raisins in boiling water or
liquer of your choice for about 1/2 hour, then drain.)
4. Pour into greased, shallow pan, bake at 325 deg. F. 45 minutes - 1 hour.
