INGREDIENTS

3/4 c Mashed ripe avocados
3 Eggs
1 c Vegetable oil
3 ts Vanilla
3 c All-purpose flour
1 1/2 c Sugar
2 ts Cinnamon
1 ts Salt
1 ts Baking soda
1/2 ts Baking powder
3/4 c Walnuts; chopped
1 9- x 5-inch loaf pan

INSTRUCTIONS

Preheat oven to 350 degrees.  Grease the loaf pan and set aside.
Mash the avocados and mix with the eggs, oil, and vanilla. Blend well. Add
the flour, sugar, cinnamon, salt, baking soda, and baking powder. Fold in
the nuts. Bake for 1-1/2 hours. Cover the top loosely with foil after the
first 30 minutes.
