Basil Vinaigrette

INGREDIENTS

1 c Fresh basil
1/4 c Tarragon or regular white vinegar
3/4 c Olive oil
1 tb Dijon mustard
1 Clove fresh garlic
Salt; (to taste)

INSTRUCTIONS

In a blender or food processor, blend the garlic, vinegar, mustard and
salt. Add the oil and basil and blend the mixture till emulsified.
Serve over gourmet salad or sliced tomatoes. Very distinctive, yet
easy, as well as different. Makes approximately one cup.
