INGREDIENTS

1 tb Olive oil
1 sl Bacon cut into 1/2" pieces
1 1/2 lb Lean stewing beef cut into 1/2" cubes
1 Onion; chopped
1 lb Flour
1 Clove garlic; minced
1 1/2 c Beef stock
1/2 c Beer
1 tb Tomato paste
1 Bouquet garni
4 sl Orange peel
Coarse salt
Pepper; ground

INSTRUCTIONS

Heat oil in heavy casserole. Add bacon. Dry beef cubes w/papertowel. Brown
the beef. Remove the beef, add the onion browning lightly. Stir in the
flour, cook for 2-3 min. (don't let the flour burn). Return the beef, with
it's juices to the casserole. Add the garlic, the stock, beer, tomato
paste, bouquet, orange peel, salt and pepper. Bring to a boil. Lower heat,
simmer gently for 1 1/2 hours, stirring occasionally. remove and discard
bouquet.  Serve warm.
