2 Whole mangos, peel seed
chop
1/2 Red bell pepper, diced
1/2 Green bell pepper, diced
1/2 Red onion, diced
3/4 c Pineapple juice
1/2 c Fresh lime juice
1/2 c Cilantro, chopped
2 T Ground cumin
1 Jalapeno, or chile of
choice
Salt and pepper, to taste

for at least and  hour. If mangos aren't too ripe, this can last for up
to 4 days  covered in the fridge.  NOTES : An article in Cook's
