Blue Cheese Stuffed Potatoes

INGREDIENTS

4 md Baking potatoes; (about 1.5 lbs)
1/2 c Sour cream
1/2 c (1 oz) crumbled blue cheese
1/4 c Milk
1/4 c Butter or margarine; melted
1/4 ts Salt
1/8 ts Pepper

INSTRUCTIONS

Place bacon slices on a rack in an 11-x-7-x-1.5 inch baking dish; cover
with paper towels. Microwave on HIGH for 3.5-4.5 minutes or until crisp.
Drain and crumble; set aside.
Scrub potatoes; prick several times with a fork. Place potaotes 1 inch
apart on a microwave-safe rack or paper towels. Microwave on HIGH 10-13
minutes, turning and rearranging once; let stand 2 minutes. Cut a 1-inch
lengthwise strip from the top of each potato. Carefully scoop out potato
pulp, leaving a 1/4-inch shell intact; mash pulp. Combine potato pulp, sour
cream, and next 5 ingredients. Spoon potato mixture into shells. Place on a
microwave-safe plate. Microwave on HIGH 2 minutes or until thoroughly
heated. Sprinkle with crumbled bacon. Yield: 4 servings
