INGREDIENTS

3 1/2 c All-purpose flour
1 1/2 c Brown sugar
1 ts Cinnamon
1/4 ts Nutmeg
1/4 ts Salt
1/2 c Chilled butter
1 1/2 ts Baking powder
1/2 ts Baking soda
1 1/2 c Buttermilk
2 Eggs
1/4 c Apple butter
1 ts Vanilla
2 c Fresh blueberries

INSTRUCTIONS

Directions: In a large bowl, combine the flour, sugar, cinnamon,
nutmeg, salt and butter. Cut the butter into mixture. Remove 1 cup of
this mixture and add 2 T. butter to create the streusel topping and
set aside. To the remaining flour mixture, add the baking powder and
baking soda. Using a hand mixer, add the buttermilk, eggs, apple
butter and vanilla. Combine until well blended. Spray a 13 x 9 baking
dish with cooking spray and pour in the batter. Top with the
blueberries and sprinkle the streusel mixture on top. Bake at 350
degrees for 50 minutes until a toothpick comes out clean. Let cool
and serve.
