INGREDIENTS

12 oz Beetroot; cooked and peeled,
; not pickled
8 oz Onion; peeled
1 pt Beef stock
1 ct Sour cream
1 sm Bunc chives

INSTRUCTIONS

Heat the oil in a pan which will take all the ingredients and saute
the chopped onion until transparent.
Chop the beetroot roughly and add it and then the stock. Simmer for a
few minutes and then liquidise.
Serve with a spoonful of sour cream on each bowl full and sprinkle
with chives.
