Broiled Snapper With Cilantro Sauce

INGREDIENTS

1/2 c Sour cream
1/4 c Chopped fresh cilantro
1/4 c Mayonnaise
2 T Chopped fresh parsley
1 t Chopped shallots
2 T Butter or margarine, Melted
1 T Chopped fresh parsley
1 T Lemon juice
4 6-8 oz red snapper fillets
3/4 to 1-inch thick

INSTRUCTIONS

In blender, combine all sauce ingredients; blend on high speed until
well mixed. Set aside. In small bowl, combine butter, parsley and
lemon juice; mix well. Brush butter mixture over snapper fillets. If
desired, sprinkle fillets with salt and pepper. Place fillets on
broiler pan, skin side down. Broil 4 to 6 inches for 8 to 10 minutes
or until fish flakes easily with fork. Serve cilantro sauce with
snapper fillets.  Serving Ideas : With Steamed Vegetables with Chile
