Chocolate Waffles

INGREDIENTS

1 3/4 c All-purpose flour
1 tb Baking powder
1 pn Salt
3 tb Granulated sugar
1/2 c Unsweetened cocoa powder
2 c Skimmed milk
1 Whole egg
3 Egg whites
2 tb Extra-light olive oil
4 ts Chocolate morsels

INSTRUCTIONS

In a large bowl, stir together the flour, baking powder, salt, sugar
and cocoa powder until well incorporated. In another bowl, mix the
milk, whole egg and oil. Stir the wet ingredients into the dry mix
and beat until smooth and creamy.
Just before cooking, beat the egg whites in a copper bowl until they
form soft peaks. Gently fold the meringue into the waffle batter, one
third at a time, until just incorporated.
Preheat the waffle iron according to the manufacturer's directions, or
until a drop of water sizzles and bounced. Brush the grids lightly
with plain olive oil, then pour about 1/2 cup of batter in per waffle
square, or enough to fill the entire iron. It all depends what kind
of waffle iron you have. Sprinkle with 1/2tsp of the chocolate
morsels and cook for 3 minutes. If the waffles aren't crisp enough
for you, put them on a wire rack and toast for a minute under the
grill.
Serve waffles hot from the iron with chocolate sauce. If you can't
serve immediately, lay them on wire racks to keep crisp in the oven
at 250F/120C. Don't stack them as they will steam and go limp!
