Christmas Kebabs with Satay Sauce

INGREDIENTS

1 tb Soy sauce
1 tb Olive oil
12 Cherry tomatoes
1 Red pepper; de-seeded
1 Courgette; trimmed
1 Green pepper; de-seeded
OR use a selection of vegetables of your
; choice
Fresh coriander and lime wedges; to garnish
Bay leaves

INSTRUCTIONS

1 Soak 18 wooden kebab skewers in water for about 20-30 minutes. Cut
the vegetables into pieces about 2cm/ 3/4", large enough not to split
when threaded onto skewers. Leave the tomatoes whole.
2 Preheat the grill to a medium heat. Combine the soy sauce with oil
in a small bowl and season with pepper.
3 Thread a selection of vegetables onto each skewer and brush with
the oil mixture. Grill, turning regularly, for about 8-10 minutes.
Serve with the satay sauce.
