Clams with Black Beans – 4th Princess Connie Woo

INGREDIENTS

2 lb Clams
2 tb Salad oil
1 tb Minced garlic
2 tb Dau see; (Chinese salted black soy beans), rinsed and chopped
1/2 c Chicken broth
1 tb Oyster sauce; (Chinese oyster-flavored sauce)
1 tb Sugar
1/2 ts Soy sauce
1/2 ts Sesame oil
2 tb Cornstarch
1/4 c Water
1/2 c Chopped green onions
Chinese parsley; (cilantro)

INSTRUCTIONS

Notes: From Hawaiian Electric Kitchen.
Thoroughly wash clams; drain. In a wok or skillet, heat the salad oil;
brown garlic. Stir in black beans. Add clams and stir-fry for 1 minute. Add
broth, oyster sauce, sugar, soy sauce, and sesame oil; cover and cook for
about 1 minute. Combine cornstarch and water. When clams are open, thicken
sauce with cornstarch mixture. Add green onions before serving. Garnish
with Chinese parsley. Makes 4 servings.
