Classic Green Salad with Sauteed Mushrooms

INGREDIENTS

1/2 c Chopped onion
1 c Sliced mushrooms
2 tb Raspberry or red wine vinegar
Salt and pepper
4 c Mixed greens of choice
Fantastic Raspberry Vinaigrette
Fresh thyme or tarragon leaves; (optional)
Cooking spray
1 Lightly spray a medium skillet and saut; about 3 minutes.

; medium-high heat
; until soft
2 Add mushrooms; reduce heat to
; medium, and
; continue cooking
; for 10 minutes,
; until mushrooms are
; softened. Add
; vinegar and cook
; until vinegar is
; well absorbed,
; about 1 minute.

3 Place greens in a large salad bowl and; if' using. Toss
; pour hot mushroom
; mixture over top.,

; Add vinaigrette and

INSTRUCTIONS

Sauted mushrooms and onion in a hot vinegar sauce are poured over the
greens to wilt and warm them. Sprinkle liberally with fresh thyme or
tarragon leaves for a flavor boost.
