INGREDIENTS

2 Ripe avocados; (preferably Haas with
The pebbly skin)
1 lg Garlic clove; mashed to paste
3 tb Lime juice -; (to 4 tbspns)
1 Jalapeno; or to taste,
Seeded and minced
2 Vine-ripened tomatoes; seeded, chopped fine
1 sm Red onion; chopped fine
1/4 c Finely-chopped cilantro leaves
Salt; to taste
Freshly-ground black pepper; to taste

INSTRUCTIONS

Halve and pit avocados and scoop flesh into a large bowl. Mash
avocado with a fork and stir in remaining ingredients, combining
well. Chill covered with plastic wrap for at least 1 hour and up to 1
day. Stir guacamole well and serve with tortilla chips. This recipe
yields about 3 cups.
