INGREDIENTS

125 g Strong cheddar; grated
50 ml Double cream
25 g Unsalted butter; melted
30 ml Beer; heated through
Salt and freshly ground black pepper

INSTRUCTIONS

Preheat the grill.
Place the cheese and the cream in a Pyrex bowl. Put the bowl over a
saucepan of simmering water, ensuring that the bowl isn't touching the
water. Stirring occasionally, allow the cheese and cream to form a
smooth sauce. This will take about 6-8 minutes.
Meanwhile toast 6 thick slices of brown bread. Cut circles from each
slice of toast with a 8 1/2 cm/3in pastry cutter. Drizzle the butter
over each piece of toast and repeat with the beer.
Finally, spoon over the cheese sauce. Season generously with salt and
freshly ground black pepper. Place under the grill for 2-3 minutes or
until bubbling and golden.
Serve immediately.
