Coconut-Date Bars

INGREDIENTS

1 1/2 c Dates
3/4 c Water
1/4 c Sugar
1 tb Lemon juice
2 c Pillsbury's Best All Purpose Flour*
1/2 ts Salt
3/4 c Firmly packed brown sugar
3/4 c Butter
1 c Coconut; chopped
1/2 c Funsten's Nuts; chopped

INSTRUCTIONS

*For use with Pillsbury's Best Self-Rising Flour, omit salt. BAKE at 350
degrees for 30 to 35 minutes. MAKES about 3 dozen. Combine dates, water and
sugar in saucepan. Bring to boil. Simmer, stirring constantly, until thick.
Remove from heat. Stir in lemon juice. Sift together the flour, salt, and
stir in the brown sugar. Cut into the dry mixture the butter until mixture
resembles coarse crumbs. Stir n coconut and nuts. Press half of crumb
mixture in the bottom of a greased 13 x 9 inch pan. Spread with the
filling. Sprinkle with the remaining crumb mixture; press down lightly.
Bake in a moderate oven (350 degrees) 30 to 35 minutes. Cool; cut into
bars.
