None of the following, as desirable as many of them are, should be the reason why you believe God has called you to the ministry of preaching: Ambition to be noticed, to prove yourself, or to “make a difference;” confidence that you could do well in the ministry; compassion for hurting people; confusion about a mystical experience; fluency in public speaking; knowledge of the Bible; failure at all other types of work; belief that ministry would be the best means to an easy life, study and intellectual pursuits, or wealth; acquiescence to the expectation of a parent or the selfish opinion of others; conviction that the church needs you. Do not enter the ministry if one of these is your main motivation. You must be called.

Mercy even with us is an optional virtue; we do not have to be merciful. We usually admire people who are, but we do not say that people must be so. We say everybody must be just. We say, for example, an employer, if he agrees to pay a certain wage, must pay that particular wage. If he does not pay it, then he is unjust and is liable to a lawsuit. All our contracts are based on the integrity and honesty and justice of people with whom we do business. They are actually subject to trials and imprisonment and even execution if they violate their duty of man to man. What about mercy among men? We love it. We admire it. We encourage it. We sometimes practice it. But we do not say mercy is obligatory… If this is true even of human affairs, we can see immediately that God does not have to be merciful. He gave us life and conscience. He gave us intelligence to meet our obligations, and He has a right to hold us responsible for using them. He has no further obligation to forgive us if we do not. We say that the Judge of all the earth cannot do wrong, but we cannot say that the Judge of all the earth must be merciful.

Agnolotti Ignudi Al Mascarpone (Meat Balls in Mascarpone

INGREDIENTS

4 oz Prosciutto; in one piece
4 oz Pancetta; in one piece
2 Italian sausages without fennel seed
4 tb Unsalted butter
4 Extra-large eggs
3/4 c Bread crumbs, unseasoned
5 tb Parmesan cheese; grated
Salt & black pepper to taste
4 qt Chicken broth
8 tb Unsalted butter
1/2 lb Mascarpone
1/2 c Heavy cream
Salt & black pepper to taste
1 pn Freshly grated nutmeg
8 tb Parmesan cheese; grated

INSTRUCTIONS

TO SERVE
Cut the prosciutto and pancetta into small pieces and remove the casing
from the sausages. Using a meat grinder, grind together the prosciutto,
pancetta, and sausages. Place the ground meat in a crockery or glass bowl,
add the butter and eggs, and mix very well with a wooden spoon until the
butter is completely incorporated. Add the bread crumbs and Parmesan, and
season with salt and pepper. Cover the bowl and refrigerate for at least 1
hour before using.
When ready, bring the broth to a boil in a large pot over medium heat.
Meanwhile, place a large skillet with the butter over low heat. When the
broth reaches a boil, start shaping the meat mixture into tiny meat balls;
a heaping tablespoon of mixture will be enough to prepare several. Make
sure the meat balls are solid with no holes inside. Drop the balls into the
boiling broth a few at a time, and as they rise to the top, tansfer them
with a slotted spoon to the skillet containing the butter. When all the
meat balls are cooked and in the skillet, add the mascarpone and heavy
cream. Mix very well and simmer for 1 or 2 minutes, or until the mascarpone
is completely dissolved. Season with salt, pepper, and nutmeg. Mix very
well, then transfer to a warmed serving platter. Serve immediately, with
some Parmesan on the side.
