The fall of man has created a perpetual crisis. It will last until sin has been put down and Christ reigns over a redeemed and restored world. Until that time the earth remains a disaster area and its inhabitants live in a state of extraordinary emergency. To me it has always been difficult to understand those evangelical Christians who insist upon living in the crisis as if no crisis existed. They say they serve the Lord, but they divide their days so as to leave plenty of time to play and loaf and enjoy the pleasures of the world as well. They are at ease while the world burns.

Almond-pear Coffee Cake

INGREDIENTS

1/2 c Unsifted flour
1/2 c Finely chopped almonds
1/4 c Packed brown sugar
1/4 t Ground nutmeg
1/3 c Mayonnaise
1/4 t Almond extract
1 17oz Pound Cake Mix
1/3 c Milk
2 Eggs
2 lb Pears, cored – peeled and
thinly sliced

INSTRUCTIONS

Grease 13x9x2 inch baking pan. In medium bowl stir together first 4
ingredients. Stir in mayonnaise and extract until mixture resembles
coarse crumbs; set aside. In large bowl with mixer at low speed beat
cake mix, milk and eggs just until blended. Increase speed to medium;
beat 2 minutes. Spread in prepared pan. Arrange pears in one layer on
top of batter; sprinkle with mayonnaise mixture. Bake in 325 degree
oven 50 to 60 minutes or until cake tester inserted in center comes
out clean. Cool slightly in pan. Serve warm.  Great with sliced peaches
