The recovery of the Christian mind and the development of a comprehensive Christian worldview will require the deepest theological reflection, the most consecrated application of scholarship, the most sensitive commitment to compassion, and the courage to face all questions without fear.

Ancho Red-Onion Flapjacks

INGREDIENTS

1 lg Red onion, julienned
1 tb Ancho powder
2 ts Cumin powder
2 c Flour
1 c Corn meal
2 ts Salt
1 tb Lemon juice
1 tb Sugar
2 c Beer

INSTRUCTIONS

In a large mixing bowl, combine onions, ancho powder, cumin, flour, corn
meal, salt, lemon juice and sugar. Stir well to combine.
Add beer, stirring to form a pancake-thin batter.
Coat a griddle with a little oil and heat over medium heat. Pour 1/4 cup of
batter out at a time to form ca,es, flattening if required. Cook until
golden brown, about 2-3 minutes. Flip cakes and continue cooking until
second side is browned. Reseve cakes on a warmed plate.
Serve with chili.
