One of the greatest paradoxes in Christian history is that the church is most pure in times of cultural hostility. When things are easy and good, that is when the church most often goes astray. When Christianity seems identical with the culture and even when the church seems to be enjoying its greatest earthly success, then it is weakest. Conversely, when the church encounters hardship, persecution, and suffering…then it is closest to its crucified Lord, then there are fewer hypocrites and nominal believers among its members, and then the faith of Christians burns most intensely.

People who are not inquisitive simply don’t make good leaders. Curiosity is crucial to leadership. People who are content with what they don’t know, happy to remain ignorant about what they don’t understand, complacent about what they haven’t analyzed, and comfortable living with problems they haven’t solved – such people cannot lead. Leaders need to have an insatiable curiosity. They need to be people who are hungry to find answers. Knowledge is power. Whoever has the information has the lead. If you want to find a leader, look for someone who is asking the right questions and genuinely looking for answers.

Apollo Potato Pancakes

INGREDIENTS

6 md Potatoes; shredded
1 md Onion; very finely chopped
2 Eggs
3 tb Flour
1 1/2 ts Salt
1/2 ts Baking powder
1/2 ts Pepper
Vegetable oil; for frying

INSTRUCTIONS

Soak shredded potatoes in the water 10 minutes; drain and squeeze dry in a
kitchen towel. In large bowl combine all ingredients except oil; mix
thoroughly. Pour oil into large skillet to a depth of 1/8 inch; place over
medium heat. For each pancake, portion 1/2 cup potato mixture into pan;
flatten slightly. Cook about 8 minutes until crispy and brown, turning
once. Repeat with remaining potato mixture, adding oil to skillet, if
needed. Serve with sour cream and apple sauce, if desired.
Makes 4 to 6 servings (12 pancakes)
