After my return to London, I decided to do something to help my brothers in the seminary. I suggested we meet together every morning from six until eight to pray and read the Scriptures. After the evening prayer, my communion with God was so sweet that I would continue praying until after midnight. Then I would go to a brother’s room, and we would pray together until one or two in the morning. Even then, I was sometimes so full of joy that I could not sleep. At six in the morning, I would again call the brethren together for prayer.

Apple-Amaretto-Creme

INGREDIENTS

2 Egg yolks
150 g Sugar
250 g Mascarpone cheese
5 tb Amaretto (or any almond liqueur)
1 Egg white
2 lg Apples (approx. 500 g)
50 ml Apple juice (approx. 1/5 cup)
Cinnamon
All-spice
40 g Amarettini (small almond or apricot stone macaroons)
1 ts Cocoa-powder

INSTRUCTIONS

1. Beat egg yolk and 50 g sugar until frothy. Add mascarpone and mix. Add 3
Tbl Amaretto. Beat egg white until stiff and carefully mix with the cheese
mixture. Put into the fridge for at least 2 hours.
2. Peel apples, cut in quarters, remove the cores and cut them into slices.
3. Melt the remaining sugar in a wide saucepan and let it caramelize (?)
until it turns golden brown. Add the apple slices and stew them for a
moment. Then pour in the apple juice, add a pinch of each cinnamon and
all-spice and let the apples cook for about 3 min. Let them cool down in
the saucepan.
4. Sprinkle the amarettini with the remaining liqueur. Arrange the
caramelized apples and the mascarpone creme in four dessert bowls.
Distribute the amarettini and finally sprinkle some cocoa-powder on top.
