Love, bless and pray for your enemies. You want to be like Jesus? You want to stop evil from spreading? You want to turn your enemy into your friend? You want to see evidence of the Holy Spirit in you? You want to root out all bitterness in your heart? You want to put aside the defeating victim attitude? Then show the humility of Christ, take the moral high ground and, Romans 12:21, “Overcome evil with good.” Don’t be natural. Be unnatural. It’s hard to hate someone when God gives you a supernatural love for that person.

Apple-Mint Couscous Salad

INGREDIENTS

1 tb Unsalted butter; plus
1 ts Unsalted butter
1 c Peeled; finely-chopped sweet apples
1 tb Minced shallots
1 ts Minced garlic
3 tb Chopped fresh mint
Salt; to taste
Freshly-ground black pepper; to taste
1 c Couscous
1 tb Olive oil
1 c Chicken stock
1/4 c Toasted; shelled pumpkin seeds
1/4 c Crumbled feta cheese -; (2 oz)
1 lg Pita; toasted, and
; cut in 8 triangles
2 Bibb lettuce leaves

INSTRUCTIONS

In a large skillet, melt 1 tablespoon of butter over high heat. Add
apples, shallots, garlic, mint, salt and pepper to taste, and saute
for 2 minutes. Add the couscous and olive oil and saute, stirring,
for 1 minute. Now stir in the chicken stock and bring to a boil,
stirring for 2 minutes. Reduce heat to medium and cook for 1 minute.
Stir in remaining butter and turn off the heat. Cover and allow to
sit for 2 minutes. Uncover and allow to cool to room temperature.
When cool, fluff with a fork and fold in the pumpkin seeds and feta
cheese, add salt and pepper to taste. Serve with toasted pita
triangles, on a bed of crisp bibb lettuce. This recipe yields 3 1/2
cups of salad.
