Apple Snow

INGREDIENTS

1 kg Fresh new season Granny Smith apples; (usually about six)
2 Cloves
1/2 c Water
2 Egg whites
1/4 c Sugar

INSTRUCTIONS

Peel, quarter and core the apples then place them into a saucepan
with the cloves and water. Cover and simmer gently until the apples
are fluffy then tip them into a colander to drain and cool (for
successful Apple Snow, the apples should be fairly dry). Remove
cloves.
Whip the egg whites until stiff and white then gradually whip in the
sugar. Add the apples then beat with rotary beater or Mixmaster until
they are white and frothy. Pile into a pretty serving dish and serve
with homemade boiled custard.
