Applesauce Pecan Crumb Cake

INGREDIENTS

1 1/2 c All purpose flour
1 ts Baking powder
1/2 ts Baking soda
1/2 ts Salt
1/4 ts Ground nutmeg
1/2 c Low-fat buttermilk
1/2 c Applesauce
1 tb Butter or stick margarine; melted
1 lg Egg
1 lg Egg white
Cooking spray
1/3 c Chopped pecans
1/3 c All purpose flour
1/4 c Packed brown sugar
2 ts Butter or stick margarine; melted
1/2 ts Ground cinnamon

INSTRUCTIONS

1. Preheat oven to 350°.
2. Lightly spoon flour into dry measuring cups; level with a knife.
Combine flour and next 4 ingredients (flour through nutmeg) in a
large bowl; make a well in center of mixture. Combine buttermilk,
applesauce, 1 tablespoon butter, egg, and egg white in a bowl; add to
flour mixture, stirring just until moist.
3. Spoon batter into a 9-inch round cake pan coated with cooking
spray. Combine pecans and remaining ingredients in small bowl; stir
with a fork until mixture resembles coarse meal. Sprinkle evenly over
top of cake. Bake at 350° for 35 minutes or until a wooden pick
inserted it center comes out clean. Yield: 8 servings.
