Love is the pursuit of our joy in the holy joy of the beloved. There is no way to exclude self-interest from love, for self-interest is not the same as selfishness. Selfishness seeks its own private happiness at the expense of others. Love seeks its happiness in the happiness of the beloved. It will even suffer and die for the beloved in order that its joy might be full in the life and purity of the beloved.

Apricot-Almond Bread

INGREDIENTS

1 1/2 c Dried apricots
1 1/2 c Water
2 tb Soft butter
1/2 c Honey or real maple syrup
1 ts Salt
1 1/2 c White flour
1 c Whole wheat flour
1 ts Soda
2 ts Baking powder
1 c Chopped almonds
1 Beaten egg
1 ts Vanilla
1/2 ts Grated fresh orange rind

INSTRUCTIONS

Cook apricots in water for 10 minutes (covered, low heat). Cool completely
and add butter, syrup and salt. Beat in egg and vanilla. Sift together dry
ingredients. Fold everything together and spread into buttered loaf pan.
Bake 35-40 minutes at 375 degrees. Remove bread from pan 10 minutes after
it comes out of the oven.
