INGREDIENTS

1 lb Uncooked linguine
2 tb Peanut oil
4 Garlic cloves; minced
1/2 c Sesame seeds
1/2 c Vegetable oil
1/2 c Sugar
1/3 c White vinegar
3 tb Soy sauce
1 tb Crushed red pepper
4 Scallions; chopped

INSTRUCTIONS

Prepare the linguine according to the package directions; drain,
rinse, and drain again. Set aside in a covered dish to keep warm.
Heat the peanut oil in a large skillet over medium heat. Add the
garlic and sesame seeds and saute' for 3 to 5 minutes, or until the
seeds are golden brown. Reduce the heat to medium-low; add the
vegetable oil, sugar, vinegar, soy sauce, and crushed red pepper and
cook for about 2 minutes. Add to the linguine and toss until well
combined. Sprinkle with the chopped scallions and serve immediately
or cover and chill until ready to use. May be served warm or cold.
NOTE: Sesame seeds are readily available in either the supermarket
spice or ethnic foods section.
