We Love God!

God: "I looked for someone to take a stand for me, and stand in the gap" (Ezekiel 22:30)

You are in danger of desiring the blessing more than you desire God, and when that happens you may be easy prey for Satan to offer you a shortcut.
Iain Duguid

Jacob is about to enter the Promised Land. He will be one of the venerated Patriarchs of the faith. But before Jacob can become Israel, the man must be broken. Jacob needs to learn that his life is to be one of continual striving with God, but doing it with full dependence on God. He will learn that with God there is a continual heat from the refiner’s fire, but through the adversity there is an unspeakable joy in the journey. And though God probably won’t be wrestling with any of us physically like He did with Jacob, there is a continual tension of finding our greatest peace when we are most intimate in close communion with God. At times we struggle, but in the pain we learn to submit to His will, allow Him to expose our defects, yield to the wounds He creates and then trust Him that the pain is for our greatest good as the “old man” is further put to death. If we act in the flesh and run away or defend ourselves or blame others or whine and complain, we’ll never experience this. As creatures so prone to follow our selfish instincts, there is a serenity that comes when God wrestles us to the ground, breaks us further of our pride and reminds us that our sufficiency is only in Him.

25 g Pine nuts; toasted (1oz)
15 ml Fresh basil; chopped (1tbsp)
Salt and freshly ground black pepper
2 Tomatoes; skinned and chopped

INSTRUCTIONS

THE SAUCE
THE ROULADES
Make the sauce by grilling the pepper skin side up until the skin
blackens. Place in a plastic bag until cool, then remove the skin.
Cut into strips.
Heat the oil, add the onion and cook for 4-5 minutes. Add the pepper,
tomatoes, garlic and water, season, cover and simmer for 20 minutes.
Liquidise until smooth, then press through a sieve.
Cut the aubergines lengthways into 5mm ( 1/4") slices. Brush with
olive oil and place on a preheated griddle until they are soft and
browned on both sides.
Mix together the cottage cheese, pine nuts, basil and salt and pepper.
Spread a little of the mixture over each slice, scatter with tomatoes
and roll up, starting at the widest end. Arrange in an ovenproof
dish, and place in a preheated oven 190°C, 375°F, gas mark 5 for
15-20 minutes or until piping hot. Serve, garnished with extra basil,
with the warmed pepper sauce.

NOTES : Cottage cheese is low in fat and has a fresh light flavour
that makes it suitable for use in sweet and savoury dishes. In this
recipe, griddling, rather than frying the aubergine means it absorbs
less oil. If you do not have a griddle pan, use an ordinary grill.
Serve the roulades with a green salad and ciabatta bread.
