Aunt Anne Blatchford’s Slovak Red Cabbage

INGREDIENTS

4 sl Bacon; finely chopped
4 Green onions; finely chopped
2 Celery ribs; finely chopped
1 Red cabbage; cored, finely chopped
2 Oranges – juice only
1/4 c Apple cider vinegar
3 tb Brown sugar
1/2 ts Salt (or to taste)
Black pepper; freshly ground

INSTRUCTIONS

1. Cook bacon in large skillet over medium heat until crisp and fat is
rendered. Add onions, stirring frequently, until very soft, about 5
minutes. Add cabbage in four batches, mixing thoroughly after each.
Stir in orange juice.
2. Reduce heat to low; cook, stirring often, until cabbage is wilted,
about 15 minutes. Stir in vinegar and sugar. Cook, stirring often,
until very tender, about 15 minutes. Adjust seasoning.
