Avocado "pesto"

INGREDIENTS

1 Avocado, peeled halved
1 c Lightly packed fresh basil
leaves
1/2 c Canned chicken broth, or
more
4 Garlic cloves
2 T Fresh lime juice
1/2 c Vegetable oil

INSTRUCTIONS

Place avocado, basil, 1/2 cup broth, garlic and lime juice in blender.
Blend until chopped, scraping down sides as needed. With machine
running, gradually add oil and blend until smooth. If too thick,
gradually add more broth by tablespoons. Season with salt and pepper.
(Can be made 1 day ahead; chill.)  Makes about 2 cups.  Bon Appetit
