There are two ways of getting out of a trial. One is simply to try to get rid of the trial, and be thankful when it is over. The other is to recognize the trial as a challenge from God to claim a larger blessing than we have ever had, and to hail it with delight as an opportunity of obtaining a larger measure of divine grace.

Basundi (Creamy Milk Pudding)

INGREDIENTS

12 c Milk
1/2 c Sugar
6 Whole cardamoms (to 8); crushed
1 ts Saffron
1/4 c Hot milk; (extra)
2 tb Chopped pistachios; to garnish

INSTRUCTIONS

Place the milk in a heavy sausepan and bring to the boil, stirring
constantly. Keep stirring and simmer until the milk reduces to one-third
its original quantity.
Add the sugar and simmer for 5 more minutes. Now add the crushed cardamoms.
Dissolve the saffron in 1/4 cup hot milk and add to the milk pudding. Stir
thoroughly.
Garnish with the chopped pistachios. Serve chilled.
