The presence of extreme busyness in our lives may point to deeper problems – a pervasive people pleasing, a restless ambition, a malaise of meaninglessness. “Busyness serves as a kind of existential reassurance, a hedge against emptiness,” writes Tim Kreider in his widely read article for The New York Times. “Obviously your life cannot possibly be silly or trivial or meaningless if you are so busy, completely booked, in demand every hour of the day.” The greatest danger with busyness is that there may be greater dangers you never have time to consider.

So, how can you “hasten the coming of the day of God (2 Pet. 3:12)?” Share your faith so the fullness of God’s people will come to salvation. Matthew 24:14, “This gospel of the kingdom shall be preached in the whole world as a testimony to all the nations, and then the end will come.” And pray - “Come [quickly], Lord Jesus” (Rev. 22:20) and “Your kingdom come” (Mat. 6:10).

Bay Scallops with Lime and Cream

Dairy Appetizers, Scallops 1 Servings

INGREDIENTS

1/2 lb Very fresh raw bay scallops*
3 tb Fresh lime juice
1 c Creme fraiche OR sour cream OR reduced-fat sour cream
Freshly ground black pepper
Radicchio OR lettuce leaves for serving

INSTRUCTIONS

Garnish: watercress and lime peel
Put the scallops in a bowl and toss them with lime juice. Chill until ready
to serve. just before serving, pour off the lime juice and fold in crime
fraiche or sour cream. Season with pepper (do not add salt). Serve on
radicchio or lettuce leaves and garnish with a sprig of watercress and fine
shreds of lime peel. *Physicians advise thatpeople whose immune systems
have been weakened by illness (such as diabetes or cancer) or by long-term
steroid use not eat raw seafood.
NOTES : NOTES:If you are an accomplished cook, this elegant appetizer will
take two minutes to prepare.  A beginner may need an extra 30 seconds.
