Beet And Walnut Salad

INGREDIENTS

3 Beets, cooked and peeled
2 Tart apples, peeled & cored
1/2 c Feta or goat cheese
1/2 c Walnuts
1/3 c Thinly sliced scallions
1/3 c Basic vinaigrette dressing

INSTRUCTIONS

Cube the beets and the apples and mix together in a bowl wiht the
cheese, the walnuts and the scallions. Drizzle dressing over and stir
to coat. Serve on a bed of butterhead lettuce.  From: The Cook's Garden
