A healthy church has a pervasive concern with church growth – not simply growing numbers but growing members. A church full of growing Christians is the kind of church growth I want as a pastor. Some today seem to think that one can be a “baby Christian” for a whole lifetime. Growth is seen to be an optional extra for particularly zealous disciples. But be very careful about taking that line of thought. Growth is a sign of life. Growing trees are living trees, and growing animals are living animals. When something stops growing, it dies.

Beurre Blanc

INGREDIENTS

175 g Unsalted butter
1 Heaped teaspoon cornflour
150 ml Stock
Salt and pepper

INSTRUCTIONS

Put the stock into a saucepan and warm through. Slake the cornflour -
stir the teaspoonful into a little of the liquid - then add it to the
saucepan and stir it in.
Chop the butter into half inch cubes and add to the pan. Whisk it
over a medium heat, melting the butter and thickening the sauce
slightly until it is the consistency of single cream and a lovely
pale gold, season to taste.
NB: Chefs don't add the cornflour, but its addition ensures that the
beurre blanc doesn't separate, provided, that is, that you don't boil
it! If you do, it will become oily and separate even with the
cornflour.
