Jonathan Edwards was one of the greatest theologians. It is also said he had one of the sharpest minds America ever produced. He was dedicated to being the best he could be for God (hence his “Resolutions”) and even back in the mid 1700’s he exercised primarily for the purpose to stay mentally sharp.

Black Bean Relish

Vegetables, Grains Salads, Vegetables 8 Servings

INGREDIENTS

2/3 c Black beans; cooked until tender and drained
1/2 bn Cilantro; chopped
1/2 c Corn
1/3 c Red bell peppers; seeded, and diced the size of the beans
2 tb Olive oil
1 Lime, juiced
2 ds Tabasco sauce (or to taste)
Salt (to taste)
Pepper (to taste)

INSTRUCTIONS

In a medium bowl place all of the ingredients and stir them together. Let
the relish sit for 1 hour before serving it.
