Black Bean Salad (main Dish)

INGREDIENTS

1 16 ounce black beans
drained and rinsed
1 Cilantro, chopped
1/2 c Sweet onion, vidalia is
wonderful however out of
season red will do
1 Red bell pepper, chopped
1 c Corn kernels, frozen are
fine
Juice from 5 juicy limes
Freshly ground black pepper
Mango, peeled and sliced
garnish

INSTRUCTIONS

Mix all ingredients except mango. Chill for at least 2 hours or
overnight. Serve on warmed no fat or low fat corn tortillas and a
great salsa (we crave Arriba Chipolte Salsa). Garnish with mango.
Great to make and serve in a Chicago heat wave (like this weekend).
