INGREDIENTS

3 c Grated carrots
4 Eggs
1 1/2 c Oil
2 c Sugar
2 c Sifted flour
1 c Chopped black walnuts
1 ts Vanilla
1/4 ts Black walnut extract
1 ts Cinnamon
1/2 c Buttermilk
1 c Sifted powdered sugar
1/2 ts Baking soda
1 tb White corn syrup

Preheat oven to 350 F. Grease a 10-inch tube pan.  Mix all ingredients
together.  Bake 90 minutes.  Remove from oven and, while cake is still hot,
glaze with Buttermilk Glaze.
Buttermilk Glaze: Blend all ingredients well.  Pour on top of hot cake. Let
stand for 1 hour.  Remove cake from pan and serve.
