Butter Rum Pudding

INGREDIENTS

3 tb Golden raisins
3 tb Dark raisins
2 tb Rum
3 Eggs
3 Egg yolks
3/4 c Sugar
3 c Milk
1 c Whipping cream
2 ts Vanilla extract
1 tb Lemon rind, grated
12 Slices bread,lightly buttered, crusts removed
1 ts Ground cinnamon

INSTRUCTIONS

Preheat the oven to 350°F.  Soak the raisins in the rum for 30
minutes. Beat the eggs, egg yolks, and 1/2 cup sugar until light and
fluffy. Heat the milk and cream until almost boiling.  Gradually beat
into the egg mixture.  Add the vanilla and lemon rind.  Cut the bread
into triangles and arrange one third of them in a greased 8 cup
baking dish. Top with half the raisins.  Repeat with the remaining
bread and raisins, ending with bread. Pour the egg mixture over the
bread and raisins. Sprinkle with the remaining sugar and cinnamon.
Bake about 1 hour, or until a knife inserted in the center comes out
