Butterscotch Date Surprise

INGREDIENTS

1 1/4 c All-purpose flour
1 1/4 c Whole wheat flour
1/4 ts Baking soda
1/4 ts Salt
1/2 c Butter; softened
1/2 c Firmly packed brown sugar
1/4 c Sugar
2 Eggs
1 ts Vanilla extract
1 pk (8-oz) pitted dates
1 c Chopped walnuts
1/2 c Water
1/4 c Sugar
1 ts Grated lemon rind
1/2 pk (12-oz) Nestle Toll House butterscotch flavored morsels

INSTRUCTIONS

FILLING
Cookie: In medium bowl, combine flours, baking soda and salt; set aside.
In large bowl, combine butter, brown sugar and sugar; beat until creamy.
Beat in eggs and vanilla extract. Gradually add flour mixture. Divide dough
in half. Wrap each half in plastic wrap; chill thoroughly.
Filling: In blender container or food processor, combine dates and
walnuts. Process at high speed until pureed. In medium saucepan, combine
date mixture, water, sugar and lemon rind. Cook over medium heat, stirring
constantly, until mixture thickens. Chill. Stir in Nestle Toll House
butterscotch flavored morsels.
Preheat oven to 375 degrees. On lightly floured board, roll 1/2 of dough
into 15x9-inch rectangle. Cut crosswise into five 3-inch strips. Spread 1/4
cup Filling down center of each strip. Fold sides up and seal. Repeat with
remaining dough and Filling. Place on ungreased cookie sheet, seam side
down. Bake at 375 degrees for 15-17 minutes. Cool 10 minutes. Remove from
cookie sheet; cool completely on wire rack. Cut into 1-1/2 inch cookies.
Makes 5 dozen 1-1/2 inch cookies.
