INGREDIENTS

1 c Raw apple cider or applejack
1/4 c Lime juice
3 Cloves garlic, minced
1/2 t Coarsely ground black pepper
1/2 t Ground papaya seed
1 1-pound skirt steak

INSTRUCTIONS

For marinade, combine all ingredients. Sprinkle papaya seed over
steak; Marinate for at least 4 hours, turning several times. barbecue
over mesquite coals or broil to desired doneness. Slice steak against
the grain. Serves 2 to 4. Variation: Beer may be substituted for the
